After hubby went to the office this morning, I went to my laptop right away. I am planning to cook some diabetic oatmeal cookies today. He misses eating sweets and of course he can’t just eat any because of his condition (he’s diabetic).
The good news is that, it’s almost controlled. A few more months of sacrifice and we will attain a good sugar count for him. His hemoglobin count is 7.0 last month and I think our goal is 6.5 so we’re almost there.
Anyway, I’m sharing this Oatmeal Cookie that I found online. This was developed by an ND (Nutritionist Dietitian) so it’s safe.
Here it is:
Easy oatmeal chocolate chip cookies
1/3 cup margarine, softened
1/2 cup firmly packed brown sugar
1 egg
3 teaspoons vanilla
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup quick-cooking rolled oats
1/3 cup semisweet chocolate chips
Vegetable cooking spray
Preheat oven to 375°F. Beat margarine at medium speed with an electric mixer until light and fluffy; gradually add brown sugar and beat well. Add egg and
vanilla, beating well. Combine flour, baking soda, and salt. Gradually add flour mixture to margarine mixture, mixing well. Stir in oats and chocolate chips.
Coat cookie sheets with cooking spray. Using two teaspoons, drop dough onto cookie sheets, leaving about 2 inches between each cookie. Portion the dough so that you make about 3 dozen cookies. Bake 10 minutes or until lightly browned. Store in an airtight container

. This is one of the easiest Fil dish to prepare. You’ll just boil the meat and let it tender then add the ingredients and the tamarind and that’s it, your dinner is ready.
We always crave for this during cold season and that’s here in the States. Way back in the Philippines, this is an all year round dish
and as always it’s partnered with rice.

I’m sharing my newly found recipe “Tom Yum Soup”, a Thai soup. It’s spicy and I’ll try to cook it tomorrow. The recipe looks easy to cook. I’ll update you tomorrow on how it taste and I’ll include some pictures
Tom Yum Soup Recipe
4 cups water
1 cup shrimp
5 mushrooms
1-2 limes
1 lemon grass
3 kaffir lime leaves
2 tbsp fish sauce
5 sprigs cilantro
3 chili peppers
1 tbsp nam prig pow
Here’s how to cook it:
Start boiling the water in a 2 quart pot. Peel and devein the shrimp and set them aside. Cut lemon grass into pieces, 5-6 inches long. Use the back of your knife to pound the lemon grass, just to bruise
it to release the flavor. If you want, you can tie the lemon grass into a knot to make it easier to
manage. Drop the lemon grass in water and let boil for 5 minutes.
Put the fish sauce and 1 lime’s juice into the bottom of the bowls you will serve the soup in. Crush chili
pepper and add to the bowl. Remove the stems from the kaffir lime leaves and add the leafy part to the pot.
Clean and halve the mushrooms and add them to the pot. Add the shrimp and turn off the heat. Shrimp gets too tough very quickly, and will cook even when it is just sitting in the warm broth. Scoop the shrimp and liquid into the serving bowls immediately.
As soon as you add the liquid to the serving bowl, you will see that the broth becomes cloudy because of the lime juice. Add the nam prig pow. Sprinkle with cilantro and serve.
Be very careful, the peppers can be hot. Take a small sip at a time.

I am drying the beef jerky that I prepared and marinated yesterday. It smells good
. Since I started being a stay at home wife, I’ve been doing a lot of experiment in my kitchen.
My kitchen is my sanctuary. The first week that I started cooking was a pure disaster. Yep, that’s right. I’m not even familiar with the measurement and the measuring cups. That’s how I suck in the kitchen..hehe. But then, my husband never gave up on me.
Even if my cooking taste alien..hehe on that time, he still eats it and compliments. He always says that waking up early to prepare his bfast and lunch is more than enough to make him happy. Naks!!
And so I continued my saga until one day, I was able to blend in my kitchen and can do the cooking with no sweat
